Lemon poppyseed muffins





I made lemon poppy seed muffins from scratch yesterday. They were really easy to make except beating the egg whites. I had to let them sit and spoon the stiff part from the top and beat them again. Besides that they weren't difficult to make. Here's where I got the recipe. The recipe doesn't tell you how many lemons to use and I had an extra big one and it still wasn't enough,so I had to use bottled lemon juice to get 1/2 a cup. So I would get three lemons unless you have bottled lemon juice like I did.
